It wasn’t so long ago I promised other skillet cookie creations. Since it is Thanksgivukkah today, I whipped a special holiday inspired one, the snickerdoodle(my favorite holiday cookie). I recreated the crumbly, warm, cinnamon sugar goodness of this holiday treat. Share it with a special person or two today in lieu of traditional desserts, you can even make an apple pie filling and serve it warm atop the cookie for a spin on apple pie.
1 1/2 c whole wheat flour
1/2 T baking powder
Pinch of salt
1/2 c sugar
1/2 c oil or melted butter
1 T sugar
1/2 T cinnamon
Heat stove top oven, leaving the baking pan out.
Combine dry ingredients, set aside.
Mix sugar and oil until blended, add egg and vanilla.
Combine dry into wet until mixed.
Mix sugar and cinnamon separately and set aside.
In the small pan evenly spread cookie dough and sprinkle the cinnamon sugar over the entire surface. Place the small pan into preheated larger pan, cover and bake on medium heat for 15 min.
Turn heat off, let continue baking off heat for 10 mins.
