Needing something easy to make in the morning, but looking for something with a high source of nutrition and health benefits? These pancakes are dairy and GF free, super easy to make and customize, as well as delicious. All it takes is 2 ingredients and instant pancakes!
1 medium (ripe) banana
Optional : dash cinnamon, 1/4 oats
First mash banana until mostly pureed with a few lumps.
Crack in eggs and mix until blended.
Heat a small amount of oil on a skillet, no oil if you have a non-stick skillet.
Pour batter onto hot pan and let cook about a minute until golden brown.
Carefully flip and allow to cook until golden on the other side.
Serve warm with choice of toppings from a drizzle of honey, maple syrup, fresh berries, pb…or any other healthy topping you would normally have with a pancake. Enjoy!
