Breakfast is not only the most important meal of the day but also my favorite! Thanks to a new refrigerator, I have been able to enjoy an easy, no-fuss morning delight that is nutritious, filling, and delicious. Over the last week I have experimented with different flavors and encourage you to take your favorite sinful treat and turn into a fun and good for your breakfast indulgence.
This breakfast chameleon is none other than oatmeal. Such a versitle little grain. It can be cooked, made into a milk alternative, ground into flour, mixed into treats, and eaten raw. Usually, mornings are strapped for time, most anyone can agree. It is a battle to leave the house looking put together and awake and not scald yourself on a cup of coffee, let alone try to eat. I accept coffee as a food group, it takes priority. Overnight oats are the perfect solution for picky breakfast eaters, people in a hurry, and pretty much anyone. It combines the filling power to get you through the first tedious hours of a morning before snack time and the nutritious boost of raw, natural goodness.
I have only been able to experiment on traditional oats, but would love to try with steel cut. The basics are simple:
1 part oats + 1 parts liquid
I have a great fondness for almond milk, but no way to acquire it, so I simply use cow milk straight from the source. I at least have this luxury, most people don’t have a cow in their front yard. However, the liquid can be any number of things..water, coconut water, milk alternatives, milk, even juice! When you prepare your raw oats it is good to determine if you will eat it straight from the fridge or warm it up in the microwave to determine your liquids choice(if you warm it up then it is no longer raw). For the oats, I like to use 1/2 cup. Why? I find this portion size satisfiying and more than enough, but you can adjust to your desires. So.. 1/2c oats = 1/2c liquid. Method:
Mix oats, liquid, and toppings
Cover, put in fridge, and forget until morning
This is the fun part. What sinful flavors can you create? Oats have the advantage of being a blank canvas of possibilities. They will soak up every drop of spicy cinnamon, sticky sweet honey, or nutty peanut butter. There is nothing quite like the aroma in the morning of well-marinated oatmeal, it is a pungent explosion for your olfactory senses. I have spent the last week devising creations from some favorite sweets with so many more ideas to try.
French Apple Pie : diced apples, apple pie spice (cinnamon, ginger, nutmeg), stevia*, topped with crunchy granola in the morning
French Toast : cinnamon, vanilla, maple syrup
Brownie Batter : dark chocolate, stevia*, optional chocolate or carob chips
Peanut Butter Cup : dark chocolate, peanut butter, stevia*
Carrot Cake : shredded carrots, honey, cinnamon, ginger, optional raisins
Oatmeal Raisin Cookie : raisins, cinnamon, honey
Peanut Butter Cookie : peanut butter, stevia*
*the sweetner can be anything but the tastes will vary, swap stevia for honey, agave, maple syrup, sugar, dates, mashed banana or whatever you desire
As you can tell there are endless possibilities to how you can change boring oats in the morning. Future creations will include mocha, pumpkin pie, coconut dream, chunky monkey, tropical cream, snickerdoodle cookie, trail mix, and so so so many more..
