Pumpkin Bread

It is October and the start of ” the Great Pumpkin Challenge!”

The first recipe is a delicious bread that is a great change from traditional banana bread. I have spruced the recipe up to make it a bit healthier, but no less scrumptious.

Prep Time: 15 min | Cook Time: 30-45 min
What You Need:
1/2 (15oz)can pumpkin puree
3T eggs*
1/2c coconut sugar
3T nonfat (or regular) plain Greek yogurt
3T water
1 3/4c flour
1t baking soda
1/2t baking powder
1/8t salt
2t pumpkin pie spices**

*You can use whole eggs, mixed together to measure out 3T
**I make my own blend using cinnamon, nutmeg, ginger, allspice & cloves or you can get a pre-made blend

What You Do:
1. Preheat oven to 350 F & lightly spray a loaf pan with nonstick spray
2. In a large bowl combine pumpkin, water, sugar, eggs, and yogurt. Set aside
3. In a medium bowl mix all dry ingredients. Gently fold dry into wet until mixed, making care not to over-mix
4. Pour into pan and bake. Now, my oven is a bit peculiar and it only took 30 mins to have warm and delicious bread straight from my oven. But you should start the time at 30 min, check it with an insert and if it comes out clean then it is done, but if not then continue baking up to 1 hr
5. Remove and allow to cool on a wire rack. Enjoy!
