Simple Pumpkin Gnocchi

Do not be scared by the word gnocchi. It is the Italian version of dumplings made from a basic combination of flour, egg, and a puree. The flavor possibilities of this hearty dish are nearly endless.. make it basic with potatoes, give it some pizzaz with purple potatoes, be a little healthy using sweet potatoes, or a variety of other similar ingredients. For this recipe I am using pumpkin.

Prep Time: 30 min | Cook Time: 3-5 min
What You Need:

1c pureed pumpkin (well-drained)
1.5-2c flour
1 egg
Salt, pepper

What You Do:
1. Combine all ingredients together to form a dough, it is going to be a bit sticky, but should still be easy to handle (use more flour as needed)
2. Tear off small round sections, about 4, and roll into long pieces (on a flour surface) that resemble rope, only about a 1/2″ thick
3. Cut the rope into 1″ pieces, tossing lightly in flour to avoid sticking
4. For a traditional looking gnocchi, use a fork to lightly press indentations into the dough
5. Bring a pot of water to a boil and carefully add the gnocchi
6. As soon as the gnocchi rise to the surface – about 5 min – remove and serve
