Pumpkin French Toast

Thick slices of challah bread generally soaked in creamy pumpkin custard with flavors of spicy cinnamon, topped with a drizzle of maple syrup. If that doesn’t sound like a dreamy breakfast to you, then I’d love to hear what would be considered one. Until then, this french toast will have you soaking up the flavors of fall in every bite.

Prep Time: 5 min | Cook Time: 3-5 min each side
What You Need:

9 medium thick slices of challah bread
3/4c almond milk or milk of choice
2 eggs
1 egg white
1/2c pumpkin puree
1.5T brown sugar
1t pure vanilla
1T cinnamon
Splash of allspice, ginger, nutmeg and cloves

What You Do:
1. Preheat a non stick pan or lightly spray one
2. Whisk together all ingredients until smooth
3. Soak each bread slice in the mixture, about 30 sec each side
4. Cook on warm pan until golden brown and easy to flip over, about 3-5 min
5. Flip over and cook the other side like the first side
6. Serve immediately drizzled in maple syrup and if desired, a dusting of powdered sugar
