Pizza with Pumpkin Pesto

As easy as it is to pick up the phone and order a pizza, wouldn’t it be so much better to deliver a pizza from your own oven with fresh topping that don’t have a price limit?! Making pizza from scratch is quick, easy, and loaded with everything you desire for way under the corner pie shop. The most complex part of pizza is the dough, but you can either make it from scratch or pick up some pre-made dough or crust from a local market. Aside from that, you can create endless topping choices with different sauces, meats, veggies, and cheeses to have a custom pizza pie without every leaving home or picking up a phone.

This recipe uses a savory pumpkin pesto and is loaded with fresh veggies, thick sausage, and gooey cheese. Recreate it at home or use the pesto and add your own toppings, I don’t judge pizza preferences, but anchovies are off limits.

Prep Time: 30 min | Bake Time: 20-25 min
What You Need:

1 pizza crust
1/2c pumpkin puree
3T pesto
2 sausages of choice, sliced
1/2 spicy pepper of choice (jalapeño, habenero, etc..)
8 cloves of garlic, minced
2 artichoke hearts, diced
1/2 red onion, sliced
1c baby spinach
Cracked black pepper
Crush red pepper
4+ oz white cheddar, mild or sharp*
* you can use more than 4oz if you like a really cheesy pizza

What You Do:
1. Preheat oven to 350F
4. Spray your baking sheet with spray and dust with cornmeal
3. Press out the dough, letting it rest a minute each stretch of the dough
4. Allow the dough to rest for 5 minutes
5. Mix together pumpkin and pesto and cover the dough except for just 1/2in of the edge
6. Start with meat and arrange evenly on the pizza, then veggies, finish with lightest veggies and sprinkle some cracked black and crushed red pepper and evenly sprinkle over cheese
7. Bake 20-25 minutes or until cheese is bubbling and just starting to become golden and crust is lightly browned.
8. Allow to sit for 10 minutes before cutting into it and enjoy
