Pulled Pork with Pumpkin BBQ Sauce

Creamy shreds of pork smothered in slightly sweet, smoky, and spicy pumpkin BBQ sauce. This can be eaten as a delicious sandwich or with your favorite side. This method can be used for any large cut of tough meats. The BBQ sauce is great for your next backyard grilling party.

Prep Time: 5 min | Cook Time: 10 hours
What You Need:

3# boneless pork shoulder
1c vegetable stock, no salt
1c water
salt, pepper to taste

1c pumpkin puree
1/2c ketchup
1/2c apple cider vinegar
1c cold water
1/2c Worcestershire sauce
2T chili powder
1/2T onion powder
1T garlic powder
1tsp salt
2T black pepper
1T brown sugar

What You Do:
1. Pat pork dry and rub with salt and pepper, place into crockpot
2. Pour stock and water into crockpot, cover and cook on low for 9 hours
3. Whisk together all ingredients for BBQ sauce and refrigerate while the pork cooks
4. After the pork is done cooking, pour out remaining liquid and shred with a fork
5. Pour BBQ sauce into crock pot and mix with shredded pork and continue cooking on low for 30 min
6. Serve between buns to make a sandwich and enjoy
