So most of you know October is my favorite month, fall my favorite season, and pumpkin is the most awesome vegetable in the world. Vegetable you ask? Isn’t it sweet? No! Well, it can be. But..pumpkin..real pumpkin is a vegetable, a type of squash in fact and can be used in so many fun ways in the kitchen.

This is how I came up with “The Great Pumpkin Challenge!”

It is 31 days of pumpkin recipes (1 recipe a day) incorporating or starring pumpkin. Recipes range from breakfast to dinner, sweet and savory, breads and desserts, and well…anything else I can create. Most people imagine pumpkin as the holiday staple of pie or the copious pumpkin infused products flooding our shelves.

I am here to tell you that pumpkin pie is not the only thing pumpkin is good for, and those products lining the shelves with the advertisement of pumpkin “flavored” are wrong, sadly. Yes, they do taste like something you would eat that is pumpkiny and that something is pumpkin pie. What you are actually tasting is a particular blend of spices (cinnamon, nutmeg, ginger, cloves, allspices, and sometimes mace) that most people think is the TASTE of actual PUMPKIN. Wrong. I’m not saying it doesn’t taste good, but understand that it is not pumpkin.

With this challenge I challenge you to get creative in the kitchen with an awesome vegetable that is taken for granted. Experience the magic of pumpkin without the spice and find out what I am raving about and why it is so awesome. This squash is great to use in your cooking all year long and not just during the fall.
